Ultimately, it depends on how much time and money you want to put into it. There is a reason that a lot of us did foam cures with vacuum bagging- it makes a really nice board. If you want something you can do in a weekend though, use plywood and deal with the weight. My first (and so far only) board...

You aren’t going to be kiting in 8 knots, at least not for a while. That is hydrofoil territory. The first time I tried foiling, I think I would have concluded it was impossible, had I not seen videos of people doing it. And that was with a production foil with plenty of r&d behind it.
