Go with the Flite absolutely it's great in light wind it builds apparent wind quickly and with Allula it's surprisingly responsive and handles the gusts very well. 10-12 knots is perfectly fine for a 10M Roam at +- 80kg on a hydrofoil. You might like a slightly bigger kite when learning but once you are proficient at hydrofoil the 10M would probably be your ideal size for 10+ knots. So 14M IMHO will be overkill and will seriously hinder your top end usability...
