I have used RPM-s for 3 years and havent had these problems. Adjust the front lines to the knots according to the wind - usually to the middle knot.
I havent played around with wakestyle/freestyle setting though - try that one - it probably only affects turning.

You have 3 topics in the question, all mixed: 1. Riding un-hooked 2. Depower/safety when un-hooked 3. Kite launching safety Questions 1 and 2 can be handled together. I would still go for a board that is like 140, maybe + <= 4 cm. Wait and see what others think. There is no point of buying a really big board, because it is only for maybe two or three sessions. Considering the fact that your friend has allready experience on snow then i dont think riding the size ...
