Points to make it better - actually get the bar in the other hand...
Seriously, though, you should be able to do the trick the way you're doing it (on land, hanging) moderately slow. Obviously, it's easier to jump up to the bar and try to pass it behind your back, but try this instead: Slowly pull yourself up until the bar touches your hip on the side you want to pass from. Yea it's hard, that's why you practice it. Then, once you're up there, try snap the bar around your back. Usually the spin comes from yanking the bar to your hip, but when you're hanging it doesn't work the same.
It's not the same as on the water, because you want the pass to be fluid and when you do a jump on a kite if you time the pass right, you'll feel like you weigh less (making it easier).
I guess what I'm trying to say is don't try to SNAP the trick to learn it. The more you practice missing the bar, the more you'll have the wrong movements programmed into your head. Start slow, then when you have it, it'll speed up on it's own because you don't have to "think" the move through, your muscle memory does the work.
Guess I rambled a bit, but hopefully you get the point.

PS - Besides surface 3s (which I don't recommend learning, they don't teach you anything you can't learn by passing a stick behind your back) try doing hop to blinds. You'll get a bit more comfortable facing away from the kite. And landing blind is a prerequisite for more advanced moves.
