I believe that bright colors deter predators from taking a nip.
This is based on the fact that many of the helpless creatures in the sea are of a very bright color (Nudibroncs, anghel fish, slugs, .....)
This is why I have very bright colored boards like fluo yellow or green.
From the predators point of view though you will more than often just be an outline as the light will be above you, so colors probably will not be a big issue.

hmm
luckily i kite in shark free waters :)

but from what i understood, bright colors=poison=not yummy...
well, ived scuba a couple of times and most of the fish i saw were bright colored, and im pretty sure theyre not poisonous, in the most part. i quess the color poison thing doesnt apply that much in the water that much.
im gonna research on this one.
although im pretty sure its very different amongst different sharks.
