With youtube, pretty much anything out there is fairly easy to pick up since there's about a million tutorials on everything that you can watch.
If you're reeeeeeeally bad at editing, or don't really care about it beyond throwing clips together:
- Windows Movie Maker (for windows - free download)
- iMovie (for mac)
Sony Vegas is a little bit more complicated, but still very intuitive and can do some neat stuff. I think it's fairly cheap as well, like $100-200
Or if you just want to dive straight into the better software:
- Final cut pro (mac)
- adobe premiere
- adobe aftereffects (used with fcp or premiere)
Most editing software these days is intuitive and you shouldn't have any problems learning how to use them. Watch a couple tutorials on youtube and you'll be good to go.

I use CinelerraCV:

Has some nifty features, but it's not very stable and probably not the easiest to use.

I use videopad video editor 2.12
Pros:
- support all basic functions
- it's simple (no complex functions, so you can teach how to use it in couple of minutes).
- you can operate directly on mp4
- it's free!

I use Sony Vegas which retails around $100 and seems well worth it.
The free Windows Movie Maker works OK for basic editing. (only the Windows 7 version works, not the old XP version).
You absolutely need a modern fast computer with lots of RAM (several Gbytes minimum)!!!

Which programs offer the ability to keep the constantly rotating footage taken from the kite strut steady with the rider upright during playback?

I use iMovie for mac and that seems to be really easy and good enough to do pretty much everything I want. When I had a PC I used windows movie maker, which was also easy but had some problems with the file format that came off the GoPro. No problems like that on the mac. The image stabilization feature in iMovie is good for smoothing out the inevitably jerky footage you get from an onboard camera in rough water, and you can crop, rotate (in 90 degree increments), and zoom the image, which is good for strut mounted stuff.
This is my stuff. You have to go back a ways to see the kite mounted videos-
