Cabrinha Chopstick is a good choice or do like me...I will use an Fone fish surf board 5'6" for theses conditions. Not a TT but should be fun strapless.
I was just in Cabarete and it has weird, confused chop due to the shape of the reef. My Ocean Rodeo Mako 150 was INCREDIBLE! I lent it to a couple guys to try and they LOVED it.
I'd re-name it the Cabarete Chop Master!
The rounded shape of the board tips allow it to cut through the chop without going squirrelly and or splashing up in your face. The huge concave allows it to grip. The center weighted stance and twin fin setup allows for a LONG waterline to edge upwind.
I rode the Mako King on flat water of South Padre this spring and thought it was pretty nice for such a long board!
Check out one of the larger Shinn CC rocker boards - probably the Luigi II wit the cutout fins for the waves, although the apparent speed of the Monk will work really well in those conditions? In fact you won't even have to go too big as they are so efficient and are IMO the most versatile fun board you could ever ride in chop

Agreed, my Gintronic is epic in the chop and planes so early compared to anything else I've ridden! I would go for the King George for light wind. Put it this way, I will never buy another twin tip that is not made by Mr Shinn

The KG does not share the CC rocker as the Monk, Luigi & Gin. Also as Plummet is not talking ultra low wind and he has a 15m Speed any 'larger' sized one of these will do the trick and if the wind picks up, unlike dedicated dorr style boards, it will handle the power very easily.
I like the roundish outline of the Luigi, makes it carvy and the fins are grippy.
135X42 planes pretty early and goes upwind very well.
As good or better in chop than my Makos.
Luigi provides the smoothest landings with jumping I've ever had.
The outline shape and rocker line suggests a nice shape for surf, but I am shit in the waves on any board.
