Depends on your location...
But here in Denmark, in the wintertime - you can kite half an hour to max three quarters after the sun has set.
And when it is summer - hmmm, you could sometimes kite all night after sunset - but you can definitely kite more than one hour after, without getting too dark

That is the good thing about the northern hemisphere - it doesnt get dark all of a sudden - it takes a loooong time, so sunset is never the "end of the session"

I'm not talking an hour after sunset. But instead the dead of night. 11pm etc., total darkness

But this is VERY location specific !
11pm is not "dead of night" here - but we can kite in the midsummer period at 11pm.
Here in the summer, the civil twilight ends at 23:30 (civil twilight is quite bright when at the sea), and the nautical twilight never ends - it lasts all night so never totally dark
The astronomical twilight is REALLY dark of course - but almost only present in the winther here.
Whereas it starts a good hour after sunset at the equator, all year
So close to the equator it gets dark early and fast, just after 6 PM and the civil twilight only lasts 20minutes
Here the civil twilight lasts almost 1½ hour, and it gets around midnight till it ends when summer...
Even in the winthertime - the civil twilight lasts almost an hour - so there are a few good things about the "cold" north compared to closer to the equator

Not for long, no, but you can get one hour in good light at least.
So as said - very location specific, as we dont even need the moonlight in order to have a reasonable amount of light deep at night (1:30 PM), in the midsummer months
But we have to pay for that in the winther then
I remember a bit up in Norway, they kitesurfed at 2:00 at night - as the sun is up 24 hours a day, so you can just pick when the wind and waves are the best - what a luxury
But must be hard in the winther with 24 hours of darkness
Are you located in Florida ?
Then I understand you find it strange when some go out after sunset - as it gets dark really fast - somewhere after 8 PM even in the summer, right ?
And only 25 minutes civil twilight.
