There are reports that Sailrocket has done 59.36knots for 500m and 55.32 knots for the nautical mile.

yup. The problem with making things bigger is that you reach structural limits of materials. By keeping everything smaller you are less likely to reach the material limits and the limits of human strength. Robby Naish setting the World Record at Arinaga in 2003 with a single fin directional, but he didn't ride it flat.
