I use 2mm (rip curl) but long arms/legs for extra sun-protection, cause Tarifa in August is ... hot (might not be only because of the sun though
)

I use a 2mm shorty, but covering my knees and a vest and it is just about ok
- most kiters wear full 2/3mm wetsuits or with short arms.

If it's sunny and Levante (hot and dry wind) is blowing you should be fine with a boardshort and a lycra for sun protection. Poniente wind tends to be "colder" and some times it can carry some rain, so a short wetsuit is needed.
Hope it helps

I must be turning into a wimp, as got cold a couple of times in Levante, but more so in Poniente
