I'm booked to hit up Barbados in a week but have friend whom will be staying at Saint Martin during that time. Should I pivot and go to Saint Martin instead? Which has more consistent wind, terrain, etc?

Been to both. If you want waves Barbados would be my call. Orient Bay, the most popular kiting spot on the French side is full of tourists and limited launches I think. Mostly flat choppy bay water with waves way offshore. Maybe the better spot for lessons.

I like st marten but head to the French side to coralita beach just down the road from orient and le galeon beaches. A bit of flat water and waves break offshore as well
Stay away from orient as its a cruise ship tourist trap. Last I went kiting was banned at le galeon but coralita is just a skip down the road
Kiting is pretty chill and you could likely have the place to yourself

more chance of wind in Barbados, less traffic on the roads, bit safer, better island in my opinion. But i do like St Martin as well.
