Lessons, helmet, life jacket, maturity/sound decision making skills. I know that seems like an uncool answer, but it's the truth.

Do you guys think I should have the go pro on the lines or where the kite is? I'm also thinking about a drone.

If you are a beginner don't put gopro on the lines, there is risk of line getting stuck in the gopro line mount so not so fun and dangerous in beginning if you don't have much experience with different self rescue techniques.
If you think you can ride without kiting touching water once then go for it in light wind.

on strut of a kite, that looks fine for photos when you got an interesting spot but video is pretty boring from up there.
Not sure about drone, unless you have someone who can fly it for you while you are shredding ;)

Personally, I would advise using a helmet mount with 1080 p Superview mode, setting gopro mount relative forward on helmet, don't put it on apex of helmet like a kook ;)
