great points above. don't forget board volume & fin placement. Also huge for board feel.
If you kite 100% in the same conditions there will probably be a best board and ask locals. Otherwise, you'll eventually want more boards than you can afford: a down-the line perfect wave board, a light jumpy freestyle board, an on shore wind/wave board, a light wind board... the difference in feel will amaze you.
