Yeah I'm sure some of these high end surf wetsuits are over- specced for kiting. The flexibility required for surfing is higher so you end up with an expensive and short lived suit. For kiting you may as well save some cash.

Another trick is wearing an impact vest and/or life jacket in the winter. This totally stops wind to your core, adds a bit of insulation, and obviously is crucial if sh!t hits the fan and your in for a coldwater swim.
