What's your favorite way to protect your feet from unseen sharps underwater?

Probably have ten different pairs of 1-3mm short booties. Can't ride without them, just feels too weird now.
Most comfortable: Atan Sunfast

But they only save your foot once if you step on something sharp. They're VERY delicate but SOOOOO comfortable.
Second best between comfot and durability: Ion Plasma and Plasma Slipper. Not as awesome as the Atans but a little more protection.
Everything else I tried (Okespor Florida/Gorge, O'Neil Suprfreaks, Xcel, NP) are either too bulky or too stiff. And I've also cut through most of them with shells, glass and oysters.
They ALL fall apart after a while. I'm pretty hard on them and if they dont get cut they unglue, the liner wears out or the dreaded hole made by the toe.

I suggest something with ninja toe. Keeps the booties from slipping and twisting around your foot.

While on the subject, can any of you give good advice on urchin-proof kiting footwear as well as oyster-proof? It seems that oyster protection is easier to get than urchin protection. Thanks.

Ion Ballistic series. They have Kevlar in the soles and offer an added layer of protection compared to standard booties that are just rubber/neoprene.

Five Fingers.
There are different models.
I have the a pair with hard rubber sole with thin and soft neoprene top. No velcro, no laces. Minimalist. They are kind of annoying to get on and off, but very nice feeling and resistance.

[*]Safety Rick has these mesh socks he wears for reef kiting that are perfect for oyster shells as well.
I forget the brand, but they look like those silver woven fishing gloves that protect from teeth and knives.
Me, I used the thinnest booties I can find, that also offer protection. I do not like the thick soles because I miss out on the feel and agility between the based of the board and my feet. I usually get a pair of low profile split-toe rip-curl water shoes. They don't last more than a season or two, but they're comfortable and protect my feet against glass, shells, reef, etc.
