Assuming that good quiver for a 75kg twintip rider is 7, 9 and 12, what is the corresponding quiver for a 100kg? I am thinking it should be: 8, 10, 13.

I’m 91kg and my quiver is 7/9/11 for twintip and I had 15m lightwind kite for riding a door.
I’d say for 75kg the proper quiver would be 7m and 10m and 13-15m lightwind kite. Certainly not 12m for anything
So for 100kg I’d say 17m lightwind kite, 12-14m regular, 10m for 20-30 knots, probably 7-8m for 30+

Intermediate level, simple jumps. Wind range 13kts-30kts with gusts up to 35kts. My quiver is 8, 10, 12. My most used kite is a 10m.

I'd probably go 8, 11 14m if I weighed that much but so many variables that depended on where you will do most of your kiting and what style you want to get in to.
As a general rule if you're not doing freestyle with a big rocker board and c kites, go for the smallest kites possible so that you can have fun turning and looping them and offset it with a larger twin tip. The Axis Vanguard comes in a 144 x 45cm and would be awesome for your weight.

whats the wind speeds you aim to kite in?
I have 98 kg.
Back then when I had an 8, I used it 1-2 times per year, and it was never a nice session due to strong and gusty wind (=dangerous).
You should consider 9/10, 13, 16-18.
You have weight, and you need power in the kite.

I have 6-9-12-15 and weigh 77 kg:s and I use the 12 by far the most. I use that kite probably five times as much as the 9 and it seems to be the right size on a majority of the days. The 6 and the 15 get used maybe 10% of the sessions, if even that so I could probably sell those and hardly notice. I have had 10,11,13,14, 16 and 18 before, but the I find the 12 to be a real sweetspot around where I kite. Feels small enough to be fun, but provides a decent botton end.
My advice to people is always that they need to analyze the conditions they have at home and choose the perfect kite size for that. Then add more kites around it. If not, you might end up with the choice of using a kite that is a bit to big or a bit to small almost every day.

^^^^ agree on “conditions matter”
But also kite models matter. Rode 9m Turbine side by side with 12m Catalyst and both I and the owner of the Catalyst agreed that 9m had more power, jumped higher (but had less drift)
At 200 lbs my most used kite is 9m but I foil a lot and would avoid jumping session unless I can boost high. That still on 9m.
The 11m Rally has been my regular kite for 13-21 knots winds

I'm 100KG I have too many kites to list but my basic quiver is 7-9-12-15-17. My advice is you want powerfully kites with good low-end power I use Roca(s) for Twintip riding I can be out in similar wind as the smaller rider with similar size kite a C-Hybrid would not work for me I know I tried. This year the 17 barely got any use since I was mostly foiling on my 15 Airush Ultra in very light wind.

What are you riding for a TT? I'm 90kg and ride a 141cm 6/8/10 and a 149 SS Glide for my 12m.

My twintip is Cabrinha Ace 141x43, most used kite is 10m. I used 8m three times this year in the winds > 25kts. I can use 12m starting from 14kts to stay upwind. My kites are all Slingshot Rallys. The wind range I kite the most is 18-28kts. I just want to see how to properly scale the quiver when you go from 75kg to 100kg. The most obvious way is go scale by 100/75=4/3 ratio, so (7, 9, 12) would be scaled to (9, 12, 16). This is based on pure math and it feels pretty big for me, since I got used to (8, 10, 12) quiver.
