Drlightwind, the foils are a different shape from flat water to riding the circular wave form. If you've had a look at the Horue guys from France, you could build a functional kite foil based on approximates, its not overly technical to get it right.
Keep the length of the fuselage about 700mm for stability and your foil area is based on speed.
