Which brands/models are people using?
what are the important features you'd look for?
What about software for training analysis after the fact?

@gbleck: the GH-625M also does. you can configure four different screens as you like with one up to four values. ie: speed, average speed, top speed, time, distance, and so on.

how about for during an actual race?
Do any of them have a decently accurate 'heading' angle display? - to take the place of a compass for reading wind shifts?

unfortunately not.
a tactical compass would be very cool: first you tell your device the wind direction, via 2 point readings or in degrees. then the device tells you your angle and even better also your vmg.
i posted this wish once at the globalsat support forum but unfortunately they did not implement that feature yet

You are not allowed any device that will show you any data during the Race. You are only allowed to use GPS devices that will give you the info after the race. So no devices with Heading Angle displays.
For the original Question:
I use my Iphone 3GS and use the GPX Motion App. I view the results with the gpsarpro Software.
