So I have a Liquid Force Rocket Foil board that I've been learning on. I've noticed though that the mounting bolts no longer slide smoothly to allow adjustments as they've dug into the plastic rails and deformed them, causing burrs. It almost seems like either the rail is slightly too wide and therefore allowing excess movement from the capture nut, or the plastic is too soft causing deformation. I've only been tightening with hand tools so not sure how to prevent this from getting worse. Any similar stories or is this a one off?

Yup, I noticed that on my LF fish as well. I'm using stock brass t-nuts.
In my case, the LF black spacer that came with the foil seem to compress a bit more, wedging against the rail.
I initially tried using additional washers, but they were just a pain to install, I disassemble my foil all the time as I don't have space in my vehicle.
What I did was build a thicker spacer using a plastic cutting board and made sure that the screws do not bottom out into the plastic surface. I posted a pic on a different thread, there you see the thicker spacer that replaced the stock LF black spacer:

Mine is on the sides....
I got the Bolt depth right
You should add washers so your bolts dont dig into the bottom of the rail
It could crack the bottom of the rail out and your board could take on water
