Still trying for medium-slow and carvy with completed jibes usually but my best "speed+control" moment so far was running 16-18 knots upwind through square 2' chop in a small rivermouth. The local coast guard stopped to watch, 'cause nobody does that around here in less than a 25' boat! With engines.
Great fun for 1/2 mile...
...and then I hit a 3'-er and came crashing down!

yes at 20 knots you are taking sea birds by surprise and making power boaters and jet ski riders do a double take.

The birds comment is spot on. I have lost count of the amount of times I have sneaked up on birds, when they eventually see you they break left or right in a mad panic. I got within about 5ft of a large sea gul once. I could hear it's feather ruffle as it beat its wings. Was a really nice moment.
