The extra plate causes a lot of extra drag. I had similar one on my surfboard to compensate for bottom channels. It was not a good solution touching down at 35km hr.

An update in case anyone is in the same boat as me. After a few more sessions I became even more convinced that I needed to move the mast plate. So I drilled, filled with epoxy and re-drilled. On the water the difference was huge. Everything got easier, faster and more relaxed. Even managed my first fully foiling turns heal to toeside, so I am happy.
My conclusion is that having adjustable tracks would surely a big benefit when learning.

... you are definitely right merl
there are also many other reasons why adjustable tracks are useful:
- the possibility of mounting different foils to the board (with a standard track spacing of course)
- different riders want to use the same foil set - they differ in height - they have a different natural stance - the foil setting can be adapted to the comfortable position of the rider on the board
... and many others...

takes a little extra time to set up adjustable plate so having fixed holes is nice too.

especially when you're strapless then it's easier to find the right position on the board
