Starting on the knees from standstill should be the easiest and safest way of all to start, but it can be a bit less compfortable, especially if you have no board pad, it can be ok if strut is short. Anyway I would recomend NOT to start sit foiling as shown in the first video above, as I after very long experience, now think it is the most difficult, instable and maybe also most dangerous ways to come into this position
I am maybe the only one learned sit foiling 1,5 times. First on stabifoils the way explained above, which is a copy of Phil's way from Horue

and now since more than one year trying on the monofoil, just using the 3 easiest versions I know:
1. starting from standstill sitting

2. starting from standstill on the knees (front straps a bit in the way, if board is narrow)
3. rarely by letting myself falling on the deck as here with a stabi foil

But on the mono I would never try Phil's way as just to hard
