There's a guy at my spot that's gone from a Speed4 to a Speed5 and has ridden the Soul; he has stuck with his Speed 5 because he says it boosts higher and has longer hang time, at the expense of being a bit trickier to fly because the Soul is so stable. He mentioned that the Soul being more power on all the time makes it a little bit torquier doing moves that require steady overhead pull, like backroll transitions and stuff, they pull you downwind more on the Soul than on the Speed.
That's a minor point for people that do airstyle, but relevant nevertheless if you're considering replacing an otherwise perfectly good older model.

Thank you for the feedback Mossy, always good to hear impressions from people who had the chance to test the two models side to side. I use the 21 only few times a year in super light days so I'm not planning to switch for the moment, but I have the impression that 99% of the future sales will be Souls. I frankly don't know how many people looking for a new FS will eventually go for a Speed...

My opinion is for the larger foil kites where you are using the low end of their range, the Speed/Sonic is a better choice. For the smaller foils or if you mostly ride on the high end of the range, the Soul would be the better choice. The more I'm riding my Soul 15m, the more I'm liking it but you can tell it's not as good for upwind. I think hang time is about equal because you can move the Soul faster in the jump and make up for the less glide.

Any opinions on which design would perform better in gusty conditions? I'm actually thinking 12m rather than 21.

Nice... I can't afford to lose too much low end though, my next kite up is a 21m. Wonder if anyone can comment on this: think it's fair to say that both the Soul and Speed5 would have comparable (or better) low-end performance over the old Speed3 that I would be replacing? Or can only a Speed replace another Speed in that regard?

Yeah, Flysurfer's weights rank in this order: Sonic Race, Soul, Sonic2, Speed.
My take is that the Soul will be the most user friendly kite in their lineup, followed by the Speed, followed by Sonic, then the Race. I think you can more or less reverse that order to rank the relative performance, so it's a trade off between skill/margin of error and performance.
