not that much of a problem to get a perfect finish coat. Every coat will only be as good as the one before, so put down a nice clean sanding coat, sand it perfect with a 80 grit, brush dust off, clean it with DNA wait 10 minutes and put your finish coat with a foam brush on.
Temperature is very important, always do finish coats in a clean room with falling temperatures, if temps raise during curing you will get bubbles.
Use the fastest hardener you can get, Sicomin EVO with Super Fast hardener works great. Then sand with 600 800 1000 1200 machine wet sanding and polish as shiny as you like.
I like the way you " gloss over" the sand 600-800-1000-1200- part. When I build a kite surfboard this is 4 hrs of solid work, not including a break. I'm not using a machine to avoid sand-through, except for last 2 steps of liquid rubbing compound and polishing.
Matt finish takes 2 hrs.

When I build a kite surfboard this is 4 hrs of solid work
takes me around 45 minutes for a kitesurf board to to sand and polish deck and bottom.
But hey, I do this mostly very day
