I would highly recommend a non-inflatable. Inflatables are good for beginners in water, for relaunching and float, but on land you can crash and break a bladder more easily.

Foils work best. Personally, I use ARCs by Peter Lynn Designs. They fly far in the window (to the edge) unlike a bridled or 3 line foil kite. This gives you more upwind performance and the internal pridle enables setup in 5 minutes. Nice to have when its cold and hands get frozen fast!
