Which fins really Matter?

I've been experimenting with a homemade 130 x35cm ply board and tried it out without fins in rather choppy water. OK until it hits some real chop/wave then easy to lose edge and a lot of ground downwind! Board is very slippery. Now I want to put some fins on.
Does anyone have advice on fin types - my 142cm WT has 40mm fins, some of the rainbow fins in a similar size look very slick but shape is quite different - should fin size and shape be related to board shape, length or water conditions??
any thoughts appreciated.
