I know this is last minute but my wife and I rented a house right on the beach in Sayulita, Mexico, from May 12 - 21, which is about 40 minutes drive north of Puerto Vallarta. We have a pool, too. May is peak wind season in the area, with 20-25 knots on average. We have two extra bedrooms vacant. The cost is $80 per night, per bedroom. There are a ton of kite spots in the area, all within about 12-15 miles. Sayulita is actually too protected for kiting, but if you surf, it's awesome.
