What kind of clear paint / varnish do you guys recomend to use on top of epoxy?

The 207 hardener has a slight yellow tint, but it is the UV resistant in it that makes it have that color.

I have used it on a few boards that I wanted to see the balsa wood finish on and it worked great. Would be perfect for covering a wood core.

A surf board is not a yacht thats out in the elements 24/7, UV resistant Epoxy or Poly is a waste of money. Your finish will not degrade before you break the board or its style goes out of date. If the board sits the dark the finish will darken over time. Water salt and sand will do more damage to a board than sun.
Epoxy coats are heavy, Poly is lighter. 7 coats of FAST dry Poly are needed, or 1 or 2 coats of epoxy both types take the same amount of time 2 days.
If you use poly over any epoxy remember, Wash the epoxy with soap and water to remove the amines that float to the surface during curing, or you poly may never cure/dry learned that the hard way back in the day.
