Assuming you don't have access to fancy equipment like a wind tunnel, probably your best bet is to find something more easily controlled. Science fairs usually want you to control all but one variable, which isn't likely to happen in regards to kitesurfing or windsurfing. One person had an idea for cutting lines, and that is replicable (buy a bunch of knives, put some in salt water for a while to rust, then cut tensioned lines with rusted and un-rusted knives of the same brand), but if you want to study something like "what is the effect of rider weight on windrange of a given kite?" or "what is the optimal board shape for jumping" or "what size kite provides optimal lift in given wind conditions?", all of these will be nearly impossible to study due to confounding variables (fluctuating wind speeds, currents, water surfaces, rider ability, etc. etc. etc.) and that doesn't even take into account the difficulty of actually measuring something (speed, height, force from kite, etc.). Even something fairly simple like one poster's suggestion about board coatings and board speed will be difficult to measure. Will you have two identical boards with different coatings? How are you even going to actually measure board speed?

I'm not saying you couldn't do a good science fair project on kites, but if you have to ask what your question is going to be, you probably shouldn't try to. Instead of trying to work around science fair guidelines to make it applicable to your hobby, just try to do a good science fair project and don't worry if it is about kites. If you had asked a specific question about kitesurfing, and wanted advice on how to go about answering it, my response may have been totally different. I used to work with college students to help them design science projects, and the best advice I can give is to find something that is easily measured and easily collected, otherwise you will end up with either a terrible project or a terrible amount of work and most likely both. A good experiment about a relatively boring subject will be so much more interesting, fun, and useful than a bad experiment about an awesome subject.

using a kite to generate electrical power is a green idea and pretty neat, would go over well at a science fair.

Why a kite turns.

You could make a "puppet kite" like the one you actually use, or make one with little pulleys and a bridle, like a "bow" kite. You could make a little stand for the kite to hang on, and let people pull on the bar, and see how the pulleys and bridle act to turn the kite and depower it.

It has been a number of years since the kite described in the following thread was created... a lot has changed in 10 years.

You could make a nicer "puppet kite" than mine... maybe a manufacturer would give you some materials to work with.
