Based on your weight and the Lithium 14m i think you would be more comfortable with the Sector V3 54. You are really light so I personally don't think the 60 is necessary for you.
**What I would suggest to maximize the 54 in those lightwinds would to get the quad fin set to plan quicker and hike upwind further. Then in those "windier" days you mentioned take the carving fin sets and have a blast around!**
Check with the shops in Dubai - there might be a demo or two or some friendly rider who will let you give them a go before you make your decision!
