Apart from the obvious (kite, board etc ) what equipment do you instructors take out on the water with you???

You said "...on the water..". If you're including land, I would add a windmeter and you should ALWAYS have at least 1 knife. I also personally always keep my car keys with me. Unless you're blessed with very predictable winds, 2 kites - in order to cover a much bigger wind range. I'll be a long way from the shore, tidal estuary with a long walk to the water so need to have everything I need with me.
