It would seem that if you substituted a snap shackle for the carabiner, you could have a backup quick release.

Hey Tom - Nice job. I´d suggest you try different lengths of the dyneema rope hence you can dial in your preffered length. The sliding movement is infact very sensitive to the length of the dyneema rope. To short, and it will feel very un-balanced.

Yesterday I used a climbing carabiner directly sliding on the dyneema rope. Worked realy well and was very easy to hook into the CL when self launching. It does stick a bit and the sliding is reduced but it is then a bit easier for jumping.

The pulley turns easily if the angle made by dyneema rope is <45 degree but normally it is >90*

I think I understand the trade off with line length. Short and it kind of tick tacks back and forth from either side 3/4 the way along so just off one hip or the other. Still give good range of motion for toeside but it feels a bit like it jumps around. Long and you start having the bar farther and farther away with more variability to where the sweet spot is. The slider will move a little more smoothly, but you are reaching more.

Anyone have any insight on what works best for them and why?

You got the issue, fixed hook is inheritance from windsurfing and kitesurfing designers didn't start from scratch as we did.

Here is a super clean super safe DIY version that is every bit as slick as commercially available products, cost is about $60. Mostly for the high end snap shackle that has a working load of 880 kg a breaking load of 1500 kg and swivels. Do your research on shackles. This is the safest option for kiting. Photos show minimal mods to a standard dakine spreader bar pad and can be done inside a half hour if you know what your doing. I run a dedicated short line wave bar as shown and a regular commercial bar for unhooking/fixed hook twin tip riding. Shorter QR set up than standard chicken loop + hook means less loss of sheeting range when using slider. Slider line and ring stow cleanly. Tie downs at bottom stop spreader bar from flipping and are tied through pad. Fixed hook does not interfere in any way with sliding system or its safety. Leash is to mini 5th or single line flag that is independent of sliding system should it fail in any way.
