How thick is the wavetray? Initially, I had read something about 3 cm, but it seems thinner, more like 2 cm.

I've been told the new generation of really fast kites do well with smaller boards than what we ride today. Maybe go small with an eye toward the future.
Eric Hertsens (cabareteairforce.com) had made a 125x32 for himself. The board turned out to be too fast for the X2's he is flying (I never guessed boards could be too fast for a kite). Maybe you can ask him what happened in his case.
So shorter boards might work, but 32 wide didn't work for him.

I was watching the Tarifa Sky ride videos posted at kiteboard.be and at the Vari's section you could see how flat he ride the board. His posture is much more upright than Catellan for example. Trays has a lot of surface area and are very good for going fast upwind, required in competitions with a small playing area.
So I think that fin positions is a matter of personal taste blended with riding style.

Each size is different, with the 137 being thinnest.

One fin in the middle of the board at heelside will promote more upwind ability. Even if you talk to Naish, their smaller board is considered a "trainer" board with the fin installed. If you remove the fin, the board is now considered an "expert" board, since you need to be better with it to go upwind. One fin in the middle instead of two (one additional fin at each end) also keeps weight down. In some cases, you may not need a full fin at the end of the board.

Hey Dwight,
Louis tried the WT 147 yesterday and said something like: "it's a board where I can't decide whether I will love it or hate it. It goes upwind like hell and is very fast, but the edge seems to pull down into the water and suddenly, I get a lot of spray in my face".
Unfortunately, I couldn't try it in the choppy conditions, since we didn't have wind for long enough. But may be its the edging Louis and I are not used to?
