OP said 75 deg "COMBINED" temp.Add water temp to air temp.37.5 water,37.5 air for example.
What you wrote makes no sense to me. Sorry. 75F is no reason to get a wetsuit. OP says “sub 75F”. I’d like to know what “sub” means temperarure wise and you need a min-max temperature range to go by when you select your suit.
Don't fret, your reading comprehension will increase with practice!

Billabong 7/6 hooded furnace lite works well for me in winter. Always so hot that even my feet/hands stay warm in the coldest weather.

I've found the Mystic Storm Sweat allows me to wear my 3:2 until near Christmas and the 5:4 for Jan-March. Don't buy one with a hood, they look good but you're better to buy a beanie as you can move your head independently.
These tops are popular with UK kiters as they keep the wind off you and they're very warm, I don't SUP but you could ware it SUP'ing.
For kiting I've found the gloves that work best for me are the Yak Kayak Open Palm mitt, single finger gloves resulted in one cold finger, mitts are a pain as you have no fingers and I'd get tendon pains in my forearm from over gripping the bar due to the loss of feel from the neoprene in my hand. With the Yaks you can pop you're fingers in and out and it's more about keeping the wind off your hands.
Hope this helps.

I've kited in 3 degrees C and was warm but usually don't go out below 5 degrees C.

Here you go, smartypants. So, piss off with your air temp readings.
Kisses.
For the OP: I can only speak for what I use, but this (with 3/2 hood, 4/2 gloves and 6/5 boots) has me covered 365 days a year. During peak summer months in Scandinavia I wear board shorts and maybe a thermo top (also for UV protection).

I am very picky with wetsuits.
My absolute favorourite at the moment is the XCEL Revolt 5-4.
It´s very warm, 10 °C air / 12 °C water is no problem at all. I wear the 5 mm Rip-Curl Flash Bomb boots at these conditions, maybe a 2 mm neoprene hood.
The Revolt is very lightweight, it is drying very fast (after 10 hours hanging in my bathroom at 20 °C without a fan it is 99 % dry) and it is very flexible and soft. And, having used another XCEL suit for four years, these suits lasts really long.

FYI Combined air temp + water temp is a real thing, he meant for temp of water+air inferior to 75F.
Next Friday air is 35F but water is still 55F!!! In New York we if wind shift from south to north air temp can drop by F40 degree no problem. so looking at water + air isn't bad idea...
Like in December when air is F35 and water F40is not the same as in late February with air F35 and water F33 ... Though I prefer talking about air temp in Winter vs Spring. Also water temp isn't a big deal until you self rescue, which becomes a huge deal... Also when water freeze on the bar that's overkill, did it only once for the sport probably won't do it again.
For OP in air 35 water 40, I can do NP mission 6/5/4 and I add a 2mm hoodie on top. It's really warm core wise, usually the issue for me are gloves, big gloves are warm but get forearm fatigue, This season I will try some 3mm. I have heard good thing of Xcel dry lock glove but I got some 3mm pre curve at Real kiteboarding the other day (patagonia I think)
