What are the differences really between. V2 60 and V3 60 ?

Identical boards are 2011 Sector 60 V2 and 2012 Sector One Design. Only paint scheme and pads are different. I ride on Sector One Design in this race:

V3 has 5 fin boxes, so you can use variations of fin set ups to gain more race like performance or more looseness. Also the whole board has been redesigned and pads are little thicker. How much better it is, I don't know as I've never tried it.
That said, if you don't need the newest/best, V2 is an excellent light wind board and long distance cruiser. More than likely it will be all the board you need

Nice video.
I just picked up this board used (with bag) for $600 U.S. in Washington State. In pristine new condition.
I noticed all your transitions were tacks, not jibes, where can I find a Tack 101 instruction on Tacking?

(correction, mine's a V2 but looks very similar)

Yeah, there are only 2 jibes in that race, at the mark and just before finish. not the usual 180 deg, but a shallow angle downwind type. Those are actually quite tricky.

Takes a while to get it. Be patient. Helps if you know how to do a simple air transition on TT, I didn't. What helped me to make them consistently, was to get a kite with good hang time - Switch Nitro 12 in my case. It gave me an extra time to shove the board around without rushing it too much.

For me using a smaller kite (11.5m instead of 18m) was easier too. I don't think it's a matter of hang time of the kite though. I think it was easier for me with the 11.5m because you can turn the kite quicker to get the power when you want it, and less power when you don't. With the 18, there's no pause button, the kite's moving through the air making power and it isn't stopping.

I was trying for a long time to land with both feet in the straps when I came out of the tack. I kept landing in the straps but with my butt in the water. Then I stopped doing that, and tried to end the tack with front foot in the strap and back foot in the middle of the board to keep the board flat. That worked much better. Then you just put your back foot in the strap once you get up to speed.
