Than why in flysurfer technical data in wind range of sonics is written data that for example 18 sonics can start hydrofoil from 4 knots ?? But zenit stay is from 5 knots.

Ask them. Good luck go to the water with kite that wont stay on zenith. And yes its possible but its much more comfortable if it stay. 4kns is borderline unridable and demands very special equipment and skills.

There's never been a day where the wind blew 4m/s consistently throughout a session. Even with nice gusts, it's always up and down. Flysurfer's technical specs also don't include any information about how much current is at your spot, the water depth, the sea state/wave height...for those reasons it's mostly useless information except when making a relative comparison within a quiver, e.g. "my 12m flies pretty well around XX knots, so perhaps this 15m will get me an addition 2-3 knots of lowend."

Because it’s quite possible to hydrofoil in conditions below which a kite will sit at zenith. You just need to keep the kite moving (looping). Easier said than done but it’s possible.

Apparent wind once you start moving.
Loop and figure-eight before getting on the foil.

I wonder what's more important for pushing low end, zenit parking or relaunch , for example Sonic 2 has better Zenit parking compared to Soul but if the wind is not consistent, eventually when you drop your kite you cannot relaunch a high AR kite like Sonic but you can wait till a gust comes with Soul. In this regard, in real life Soul/Pulsion could be better kite for low end unless you an expert.
