No different to me learning on my mutant. Do it. It's possible.
Your mutant has straps (and is slightly bigger)
Way easier than a strapless skim, no comparison

It has straps.
For the first month I roll with single front foot hook.

Any tips to finding a good balance point on a random skim board? Or where to get double thick deck pads - you know, from the trash so I can win the competition?
I had my foot position relative to the plate on my foil figured out from the surfboard I learned on. Then just set the foil position to match the natural foot position on the skim.
Make sure you find a stiff enough skim. The deck pad in the pic was factory installed, but I bet you could make an underlay from a hardware store fatigue mat or kids playroom mats. Have to source the top pad from somewhere online. You can generally get two skim cut outs from a single SUP deck pad.... Won't win the cheap award tho! A full SUP pad cost a few bones.

Have you all seen this? An adhesive foil mount with tracks... $160, but keeps you from having to drill holes in your board - and gives adjustability if you don't drill correctly the first time

I don't trust it long term. Might stick for a while but my guess is that water will eventually get in and the foil will fall off.
Plus it doesn't account for the stiffening of the board which typically needs to occur unless you have already purchased a dedicated foil board. In which case you don't need the plate.
Socomm.
Take your wakeskate, lay down a piece of wood where the foil would be bolted. Jump on the board and stand in the appropriate place and see if you can get any significant bending of the board. If so thats not good and will effect your learning. Slap some carbon uni on the board to stiffen it up.

I finally got around to mounting a skim board that was given to me to my spitfire. Took less than a half hour to unscrew the plate from my shinnster, drill and epoxy the holes, and then reassemble in time for a beer as there's no wind today!

I think it will be fun just to do it
But otherwise difficult and it will stay fully under water when starting so not easy.
Mine barely float on its own, even with a carbon foil - have you tried and seen it float ?
When waves or chop it is difficult to find the board, when you fall, that is something one has to think about at some spots
Looking forward to hear how it goes

Beauty is in the eye of the beer-holder,
And that looks like a nice one!
Add a foam deck pad if it's sinky, should be fun...

I reckon it's about 20% less area than my shinnster but 20% thicker so it will hopefully float without needing a deck pad! But yes, this is more of a fun experiment and perhaps if it works well a playful strapless board that can double as a bar table.
I can't find it but there's a video from a month or two ago with some french guy riding a zeeko carbon foil and only the shinn foil plate and no board. The setup just barely floats, but he's still able to air gybe it fluidly!
